Turn leftover turkey into tasty curry

The big holiday dinner is over. The dishes are put away, the nieces and nephews have all gone home. Another year will pass before you have to see a giant Garfield balloon grotesquely hovering over New York City. But most of all, you never want to think about FOOD again -- and don't even mention the "T" word. But we all know that a good three pounds of leftover "T" word is probably sitting in your refrigerator right now. The good news is with a little innovation you can turn that "T" word into a wonderful post-holiday meal, which is decidedly un-Thanksgiving-like. The better news is that this recipe also makes good use of leftover stuffing ingredients. Our recipe calls for apples and raisins. But feel free to toss in other leftover goodies, such as nuts or dried cranberries. One year I threw in a couple handfuls of leftover stuffing and it turned out surprisingly well. I don't recommend doing that if you have cornmeal-based stuffing. And as you are basking in the afterglow of another successful Turkey Day, remember this is only the beginning of the holiday season.

Turkey Curry

What you will need:

2 tbsp vegetable oil
1 tbsp curry powder
1 med. onion, chopped
1 apple, peeled and chopped
3 cups cooked turkey, chopped
1.5 cups raisins
1 cup turkey broth

What to do:

  1. In a skillet, heat oil on medium

  2. Add curry powder and stir

  3. Add onion, saute 2-3 minutes

  4. Add apple, turkey, raisins and broth

  5. Simmer uncovered for 20 minutes

  6. Serve over rice
