One of the best ways to ring in the New Year is with family, friends and a large spread of finger foods that will last until midnight. Whether you are hosting this year's fete or bringing a dish to someone else's, this tasty (and easy) salsa is a great addition to any party spread. Pineapple pico de gallo offers summery flavors of pineapple, plus a jalapeno kick. Serve with your favorite tortilla chips, or if you really want to go all out, pineapple pico de gallo is an excellent addition to a Mexican-style buffet. Serve up a pot of beans, chop your favorite toppings and set out tostada shells. Add a pitcher of margaritas and your New Year's fiesta is sure to be a hit. Pineapple Pico de Gallo
What you need:
1 medium sized ripe pineapple
2 lbs. Roma tomatoes
1 medium red onion
1 small bunch of cilantro
3 jalapeno chilies
1 tbl. salt
2 tbls. sugar or Sucralose sweetener
What to do:
- Peel and core pineapple and dice into 1-inch chunks
- Dice Roma tomatoes and red onion in 1-inch chunks
- Wash and chop cilantro and jalapeno peppers
- Combine the above ingredients in a bowl, season with the salt and sugar and mix thoroughly
- Chill and serve with your favorite chips or as a condiment.
