Make caramel corn a tasty Christmas Eve tradition

Think it's too late to whip up some festive holiday fare that the whole family will love? Think again. This caramel corn recipe is easy and fast and makes a great treat that guests can munch on all day long. All you need is a few simple ingredients, a paper bag and your trusty microwave. You can also put caramel corn into a tin for a yummy last minute gift. For extra fun, while it's still warm have kids shape into popcorn balls, then stack a few on a cake stand for a lovely centerpiece.

What you need:

4 quarts popped corn
1 cup brown sugar
1/2 cup butter
1/4 cup Karo syrup
1/4 teaspoon salt
1/2 teaspoon baking soda

What to do:

  1. Place popped popcorn in a large paper bag.

  2. In a microwave-safe bowl, mix brown sugar, butter, syrup and salt and cook for two minutes

  3. Remove from microwave and stir once

  4. Place back in microwave for 2 more minutes

  5. Add baking soda to mixture and stir well

  6. Pour mixture over popcorn and microwave bag on high for 1 1/2 minutes

  7. Remove bag and shake well, place back in microwave for 1 1/2 minutes

  8. Remove bag, shake well again and let popcorn cool on aluminum foil
